Chili
Equipment
- 1 large pot
Ingredients
- 1 lb bacon cut into 1" pieces
- 3 lbs ground beef
- 1 yellow onion diced
- 1 head garlic minced
- 2 Tbs chili powder
- 1 Tbs cumin
- 1 Tbs oregano
- 1 tsp ancho chili optional
- 1 tsp chipotle chili optional
- 1 tsp Smoked paprika optional
- 2 Tbs Salt or more as needed, the stock and tomato are unsalted
- 1/2 tsp Black pepper
- 1 box Pomi finely chopped tomatoes
- 1 box Pomi strained tomatoes
- 2 boxes kidney beans rinsed
- 1 cup water or stock more or less to your preference
Instructions
- Cook bacon until browned, remove from pot to set aside. Drain most of the fat.
- Cook ground beef until no longer pink. Drain fat and drippings completely.
- Add onion and garlic to the ground beef, cook until beef is browned and onion is translucent.
- Add spices to the beef, stir.
- Add tomato, rinsed beans, and water or stock to the beef mix.
- Chop or further break up cooked bacon, and add back to pot.
- Bring to boil, turn down and simmer as long as you can wait. 20 min minimum, better if simmered 45-60 min.
- Serve topped with sour cream or cheese.
